Things to do when you can't get out #1

Not a typical Friday night in but at least it gave us the chance to get on with the Xmas fare and get these ready for the freezer.

Warning,contains dead animals.

Poor little things. They didn't have time to grow up & get enough meat on them.
I used to be fascinated when we ate our chooks. Dad had his chopping block & the chook would hang & bleed on the clothes line, Mum would boil the kettle & pour it over it before plucking & then the cleaning started. We loved the squalshing sound made as the hand pulled the guts out. Gory, blood thirsty work isn't it?

I don't think you were looking for any praise with these photos but I'm sure you will get responses.

Hi Ross yes it can get a bit gory.These birds have been hung for 6 days so we dry pluck as pheasant skin is soft and quite baggy so easy to tear.We only wet pluck fresh birds.Quite theraputic really.

Hi John,not if you keep them at about 10 degrees celsius which this week has been no problem.We hang them in the outhouse so no probs.Also never leave them piled together or they will decompose quicker.Some people leave them for 10 days but that's a bit much for me

We take the breasts and legs off ours. Casserole tastes very good but stuffing the breast with haggis and oven cooking really tastes special. It keeps most of the meat, saves much of the plucking and can take the gaminess out of the meat, making it more palateable to newcomers to pheasant.

Free range, low cholestorol and fairly organic.

Kangaroo meat (mince) is excellent here for that. It's a bit gamy for spaggheti bolognaise, but great for rissoles (hamburgers).
