A good sharp wood carving (instrument makers) knife does it well, but remember to trim less at first because it is much harder (read impossible) to put it back afterwards (I've probably trimmed a little more than I needed to). Also use pencil lead (graphite) for lubricant when fitting.
I fiddle with violins (when I'm not fiddling with a camera).
