For birding, which would produce the better IQ - an M1 Mkii + the 40- 150mm F4-5.6 ED, or the M5 Mkii + the 40-150mm F2.8 pro?

And can you say why?

I suspect that you may have the 40-150mm F2.8 Pro; mine is the F4-5.6,
