Not entirely true, it depends, what you describe happens when EVF sensor=auto , if you set EVF sensor=off and you use EVF you can also use the pad with black LCD unfolded.

It's more complicate because especially when you focus with CAF and L mode (10fps mechanical up to 18fps electronic) as you half press the exposure is continuous changing according to the light...

I think you have to try the L mode with 6fps, you may have a better success and you can track better with Liveview.

The focus racks back and forth because camera tries to find the next target... It's how Olympus engineers made CAF routines work, if you try it on a stationary target you will find many misfocus...
