How do you do this...reason I ask is that I would like to do something similar for Capture One 4...

The method is totally different (I have no idea how to make custom profiles in Capture One) - but in essence, it was a case of photographing a couple of standard targets, opening them in Oly Master and in the Adobe Profile editor and adjusting the output of the profile editor until they matched the output of Oly Master. You can then change the picture saturation/mode in the raw tab of oly master to change the picture to look like the different output styles of the camera.

okay...so it was the empirical method...
no problem... in C1 as there are several curve mangling features that can be set as a pre-set...
just have to either get a target or use some images from different scenes

I initially tried to match the output by using the eye-dropper in PS on the output from both using a Gretagmacbeth target. This was fine, except it still left other colours being messed up. I then went for a more general target and did it by eye on my calibrated monitor - the result is much better.

I used this as my 'by eye' target:
